Once, back in the seventies, Nielsen and a Chinese customer visited a Danish chicken slaughterhouse. The customer was mildly surprised to see that several parts of the chicken were sorted out as unfit for human consumption. He pointed out to Nielsen that chicken feet and other parts of the chicken were, in fact, a delicacy in China. – This information opened up a whole new market for European meat producers, Nielsen tells us.
Where several parts of chicken and pork such as feet, snouts, stomachs and uteri, were regarded as waste products in Europe and as such they were sold on to producers of bone meal for animal feed. However, the meat producers soon began to realize that this wasn’t the case in other parts of the world. Nielsen could buy the so-called waste products at twice the normal price and ship them to China where he could sell them to satisfied buyers.
